Recipe for German Pancakes (dairy)

This is my adaptation of husband's grandmother's recipe.

This recipe is very easy and it fun to watch the pancakes puff in the oven. It is an easy and delicious way to serve an egg breakfast to many people without having to hover over the stove top. We always serve these when kids sleep over our house.

Ingredients:
3 Tablespoons butter
½ cup milk
½ cup all-purpose flour
3 eggs
½ teaspoon salt
confection sugar for sprinkling

Instructions:
In a glass pie plate, put 3 Tablespoons butter.
Place the plate in a preheating 425 degree F oven on a middle rack with some room for the pancake to rise (4 inches at least), so that the butter melts as the oven preheats.
Mix ½ cup milk, ½ cup all-purpose flour, 3 eggs and ½ teaspoon salt just until moistened.
The mixture will be lumpy.
WITH OVEN MITTS, carefully remove the pie pan with the melted butter from the oven and quickly pour the batter into the pan.
Quickly return the pan to the oven.
Bake 12-18 minutes.
If there are children nearby, leave the light on in the oven so they can watch it rise!
Pancake is done when the sides are golden brown.
Quickly remove to serving plate (otherwise it sometimes will stick to the pie plate) and serve sprinkled with confection sugar.

Recipe didn't rise. Stayed flat in the pan.

Were you able to get the oven hot enough (preheated all the way)?

We love German pancakes! We first had this at the Old South Pancake house in Fort Worth,TX. They made an individual sized recipe and called it a "Dutch Baby"! Our recipe is a tad bit different...

Preheat oven to 400. While oven is preheating put 1/2 stick of butter in 9x13 pan in the oven to melt butter. Then mix in blender...

4 eggs
1 cup milk
1 tsp salt
Blend these 3 ingredients well then add
1 cup flour.
When melted pour butter into blender leaving a small amount in pan, give the blender one more whir then pour quickly in pan and pop into oven for 20min.

I've used this recipe for 10 years and I've never had it fail.

We love to make a lemon glaze with fresh squeezed lemon and powdered sugar. YUMMY!

OH WOW, I WAS RECENTLY DOWN IN FORT WORTH AT THE OLE PANCAKE HOUSE AND HAVE BEEN DYING FOR THE RECEIPE, THESE ARE THE ABSOLUTE BEST PANCAKES I'VE EVER HAD, WE WERE THERE EVERY DAY, FOR MY FIX!!!

Rose and looke good but not a soft texture, it had a hard shell - what could have caused this?

Did you melt the butter in the pan while it was preheating?
